We live in a highly industrialized economy and a time when information is extremely valuable. While these is good, a couple aspects of our nutrition does get overlooked. If the statement, “I am what I eat” holds true! Then, I would like to eat only fresh produce – fruits and vegetables – and fresh meats. This desire however is a major challenge. Even when one buys foods from retail outlets that offer ‘fresh’ produce, fresh has a different meaning.
Fresh in our industrialized society may mean ‘still fit for human consumption’ and not necessarily ‘picked up or harvested’ today and made available the same day for sale. The challenge to harvest and make available for sale the same day especially in the developed nations is massive. Consequently, by the time, the ‘fresh’ produce reaches the customer, it is not really fresh fresh, but just convenient for consumption. Anyway, what is the big deal about freshness?

As a results, consuming these produce does not help us meet the nutritional requirements (Vitamins, Minerals, Phytonutrients) we need to keep strong and healthy and fight simple ailments like colds and flu. Needless to add, the high degree of processing and processed foods available.
A story to say it all
A story to drive the point home. We had just bought some fresh apples from the store. I could not wait to dig my teeth into one of them. I cleaned it, and was about to enjoy it, all excited when a friend from a farming State commented; “Last year apples!” Dumbfounded I looked at the apple and could not understand how. To drive the nail into the wood, she exclaimed, “I live there, I have seen it with my own eye!” The fresh, red, delicious, tasty looking apple was no more but just fiber at best….
